From The Owl’s Kitchen


Do you have a favorite family recipe, a weeknight go-to, or a secret dessert that always gets compliments? Each issue of OWL BE INFORMED will feature a recipe submitted by one of our Night Owlers. Send yours in for a chance to be featured next quarter (and yes, bonus points if you include a photo of the finished dish).

This quarter’s recipe comes from Jason Abbott, who shares one of his mom’s favorites: Tortellini Soup.

 

Jason’s Mom’s Favorite Tortellini Soup

Serves plenty, freezes well, and tastes even better the next day.

 

Ingredients


2 onions, chopped
2 peppers, chopped
2 lb hot sausage (bulk or links, cut in pieces)
2 cans tomatoes (with or without juice)
2 small cans tomato sauce (optional)
10 cups beef broth (or bouillon)
1 cup red wine
1 cup water
Salt and pepper
Oregano and basil
2 lb tortellini
 

Directions


Sauté onion, pepper, and sausage until cooked.
Add everything else except the tortellini. Bring to a boil, then reduce heat and simmer 1 hour.
Add tortellini and cook less than 5 minutes to keep them al dente.

 

Jason’s Notes


“I don’t measure much. Approximate works fine. Sometimes I add sauce, sometimes not. I like Contadina tomatoes with burgundy wine and olive oil, but plain works too. If you make a large amount, divide and freeze before adding tortellini. Reheat, toss in pasta, and it’s like fresh soup all over again.”
