This quarter’s recipe comes from Jason Abbott, who shares one of his mom’s favorites: Tortellini Soup. |

Jason’s Mom’s Favorite Tortellini Soup |
Serves plenty, freezes well, and tastes even better the next day. |

2 lb hot sausage (bulk or links, cut in pieces) |
▪ |
2 cans tomatoes (with or without juice) |
▪ |
2 small cans tomato sauce (optional)
|
▪ |
10 cups beef broth (or bouillon)
|
|
Sauté onion, pepper, and sausage until cooked. Add everything else except the tortellini. Bring to a boil, then reduce heat and simmer 1 hour. Add tortellini and cook less than 5 minutes to keep them al dente. |
“I don’t measure much. Approximate works fine. Sometimes I add sauce, sometimes not. I like Contadina tomatoes with burgundy wine and olive oil, but plain works too. If you make a large amount, divide and freeze before adding tortellini. Reheat, toss in pasta, and it’s like fresh soup all over again.” |
